Fish Tacos Recipe

FISH TACOS by DON MANUEL’S RESTAURANT, CAPELLA PEDREGAL

Ask any Baja visitor or a Baja local about his or her favorite casual Mexican dish – and you might the same answer: tacos! Tacos are a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling. A taco can be made with a wide variety of fillings, including beef, chicken, seafood, vegetables, cheese, … thus allowing you to create a different taco for any day and with any flavor you might crave after.  In Baja, where we are surrounded by the Pacific Ocean and the Sea of Cortes, we recommend fish tacos, made with fresh fish and/or a great variety of seafood. The guests of Don Manuel’s restaurant at Capella Pedregal rave about our Fish tacos, and we are happy to share the recipe with you, so you can re-create the Capella Pedregal memories at your home, at your events, parties and celebrations.

Ingredients:
1 filet of sea bass cut in long strips
Tortillas

Taco Garnish
1 Cup cucumber peeled and julienned
1 Cup julienne Cabbage sliced very thin
¼ cup xnipec
Mix together

Tempura Batter
1 egg
1 cup cold sparkling water
1 cup all purpose flour, sifted
Salt to taste
Mix before you are ready to use

Serrano Mayo
1 cup mayonnaise
2 Serrano Chiles diced with the seeds removed
Juice from 1 lime
Salt
Mix all ingredients

Xnipec
3 red onions sliced very thin
Juice of 4 limes
1 tablespoon dried oregano
1 habanero chile seeds removed and sliced
Mix all ingredients and let it sit overnight

Method:

For the Tacos dip the filets of sea bass in the tempura batter and fry in oil at 350 degrees Fahrenheit (175 degrees Celsius) until they are golden brown and the sea bass is cooked in the inside. Remove from oil and drain any excess oil from the sea bass. Assemble tacos tortilla, sea bass, serrano mayo, taco garnish and enjoy.

Capella Sling

CAPELLA SLING, CAPELLA PEDREGAL SIGNATURE COCKTAIL

Anytime is a cocktail time at Capella Pedregal! Today we’d like to share with you this fine cocktail, one of our favorites (we admit – our Cocktail Masters did such a great job with the cocktail selection that we love them all). Capella Sling  has just the perfect amount of spirits and fresh juices, it is refreshing and colorful as the colors of Mexico.

Ingredients:

* 1½ Oz Vodka
* 1 Oz Raspberry
* ¼ Oz Fresh Lime Juice
* ½ Oz Pomegranate Infused Tequila
* ¼ Oz Grenadine
* Lemon-Lime Soda
* Soda Water

Method:

Add all ingredients to the highball glass, add ice cubes and finish filling with the sodas. Garnish with an orange wedge.

Spicy Mango Margarita

Spicy Mango Margarita Signature Cocktail

Imagine escaping chilly winter and spending it at the perfect hideaway, at Capella Pedregal in Cabo San Lucas. Than imagine laying on your lounge chair at Capella’s beautiful plunge pool, at sunny weather with lovely 80 F (in January!), and the horizons melting in front of you … And while you watch the whales passing by, your best friends Eriberto, Joaquin, Michel, Damian, Osvaldo or Abran will keep you stocked with some deli appetizers and Capella’s signature Spicy Mango Margarita Cocktail or anything else you might desire …

Ingredients:

1.5 Oz. White Tequlla
0.5 Oz. Orange Liquor (Triple Sec)
1 Oz. Fresh Lime Juice
0.5 Oz. Mango Concentrate
Half tea spoon of Tajin Chipotle

Method:

Mix all the ingredients in a blender with ice and serve in a martini glass.
Shake all the ingredients to serve in on the rocks, chilli rimmed

The history and the founders of Los Cabos

Just couple of years ago, in 1970-ies, Cabo San Lucas was a tiny fishing village. The airport was a tent, there was one restaurant in town, and one T-shirt store. And today? Cabo San Lucas and San Jose del Cabo (both also referred to as Los Cabos) are beautiful small towns with the Mexican charm, beautiful hotels and resorts, high end residential developments, abundance of restaurants, entertainment spots, amazing golf courses, and plenty on and off-water activities to choose from.

See the history of the development of Los Cabos, told in two videos through the eyes of the developers, who were here when it all started. The CNN Interview, Human Factor, with Horst Schulze, Capella’s Founder and CEO

Hotelier Horst Schulze defines excellence as continuously improving. That’s what has motivated him to overcome the hurdles of growing up poor, battling a deadly cancer, and for opening small boutique luxury hotels all over the world. He tells his story here:

Born during World War II in a German village, having food and a bed were luxuries. Christmas was no exception. As a child I would receive the same gift re-wrapped, year after year. It was opened on Christmas and then returned to the attic in early January after my birthday.

As a young child I would tell my parents that I wanted to be an innkeeper. The irony was, I had never stepped foot into an inn. After all, as my parents explained, hotels were for important people. We were not important. However, I knew it was the innkeeper who always had a hot meal for dinner and a soft bed at night, so my goal remained. Today, I am the Chairman and C.E.O. of the West Paces Hotel Group, a premier hotel management company and consulting firm. The path I’ve traveled has been, and continues to be, filled with ups and downs. From professional challenges to battling cancer, the question I ask myself is: Have I struggled well?

I left home at 14 and got a job bussing tables. From there I worked my way up, training in some of the foremost hotels and restaurants. I continued to be told that I was not one of these people. They were special and I was not, but this did not deter me. Before creating West Paces, I was the Founder, President and COO of The Ritz Carlton Hotel Company. During my tenure, I was named “Corporate Hotelier Of The World” by Hotels magazine and the company won the coveted Malcolm Baldrige National Award twice (in 1992 and 1999). Additionally, the company was continuously voted “best hotel company in the world” by convention and trade publications. I have learned that I am important- but no more important than each of my employees. I am extremely grateful for my time with the Ritz, but am even more excited to take hotel service to another level with Capella Hotels and Resorts and the rest of the West Paces family.

While on paper all of this reads as glamorous, nothing was achieved without commitment and resilience. My fight with cancer proved to be such a test. In 1994, I was diagnosed with a rare, aggressive, sarcoma. I could not imagine leaving my wife and daughters. Relinquishing my treatment to the doctors was simply not an option. After all, it was and is my life. I took it upon myself to research the best options with the highest success rates. After much research and prayer, I embraced a treatment plan of surgery and the macrobiotic diet, instead of the conventional chemotherapy. This battle gave me a new perspective on life. It caused me to appreciate the world around me, recognize that there is a greater purpose and embrace the higher power. Today I sit on the board of “Cancer Treatment Centers Of America,” because they understand the importance of keeping patients connected and empowered.

Another lesson I have learned is not to allow my dreams to become derailed by ‘reasons.’ In the end, “it’s too hard” or “the timing is wrong” are simply excuses created to protect one’s ego from failure. It is essential to have purpose in life and in everything you do to strive for excellence.

A dishwasher at one of our properties reinforced this concept. Mr. Setu was both exceptional and professional at his job. One day I asked him, “why [he] was so dedicated?” His answer, he was “not working, but creating excellence.” This idea is something I am constantly striving for.

Excellence is a doctrine central to my professional tenants. In fact, I am most proud of the feedback I’ve received from former employees, who thank me for contributing to their belief systems and consequent successes. Recently, I ran into a gentleman I trained many years ago. He explained that he had taken my teachings and applied them. Fourteen years ago he was a banquet server. Today he is the general manager of a fine hotel.

Of course my family is of vital importance to me. My wife is a source of pride and inspiration. She runs a non-profit, (Plan A Foundation), that works in conjunction with West Paces in a program called FragmentsFragments takes the extra food from our hotels and provides it to those in need. In this way West Paces is helping to fulfill a greater purpose and for me life has come full circle.

__Thursday 23rd December
The holiday Season begins

Santa Claus and his helpers arrive to Capella Pedregal at 11.00 am on their Harley’s. Please join us at the Loggia to share this special moment with fellow guests and celebrate the spirit of the season with a gift for each and every child.

Breakfast is served at Don Manuel’s from 7.00 am serving Egg Nog “Rompope”, offering the Full Buffet Selection from Su Cocina and Full A la Carte menu. During the day the lunch menu is offered at Don Manuel’s, all day dining menu at the Beach Club, pool side menus and the tempting Barbeque Selection offered atthe the Beach from 12 noon to 4.00 pm.

A four-course gourmet dinner will be served at Don Manuel’s with all the party trimmings.

John Legend, The Roots and Joss Stone Under the Stars at Capella Pedregal

Grammy Award Winners and Nominees Take Center Stage at Capella Pedregal’s Inaugural Live Concert

On Saturday evening, December 11, at Cabo’s hottest resort, Capella Pedregal, 200 music lovers gathered under the stars for an intimate Oceanside performance from Grammy award-winning artists John Legend, The Roots and Joss Stone. John Legend and The Roots lit up the stage performing songs from their recent five-time Grammy nominated album, “Wake Up!” followed by Joss Stone’s soulful vocals of crowd favorites such as, “Tell me Something Good,” and The Roots’ “You Got Me.”

Concert attendees and resort guests were seated in a lounge-like setting of couches, beach cushions and low-rise chairs, giving a relaxed, living room feel to the night’s festivities.  The artists performed on a circular stage suspended over a rock pool near the crashing waves of the Pacific. Following the concert, world- renowned ?uestlove entertained guests and fellow artists during a late-night dance party at Capella’s Beach Club.

The first of this exclusive concert series raised funds for the Capella Foundation, which supports the Los Cabos Children’s Foundation, the Gallento Educational Charity and the Los Cabos Humane Charity.

The evening earned rave reviews for its intimacy and star-lit ambiance from attendees, who are eagerly awaiting word of the artists who will perform the next concert, which will be announced in early 2011.
