
Capella Pedregal‘s fine dining restaurant Don Manuel’s features signature kitchen “Su Cocina“, which is transformed every morning into a breakfast buffet representative of a Mexican market. The breakfast buffet features Mexican glass jars filled with freshly squeezed juices, breakfast pastries from the wood burning oven, a daily selection of specialties cooked to order, and among others, our guests special – granola.
The wish for this recipe was submitted through Capella Pedregal’s Facebook page by our guest Alan Azem, and we are glad to share the home made granola recipe with Alan and with all of You who wish to prepare this tasty meal for your breakfast.
Ingredients:
500 Grs Pecan Nuts
500 Grs Pistaccio
500 Grs Almond
500 Grs Macadamia Nut
500 Grs Hazel Nut
500 Grs Pumpkin Seed
500 Grs Sunflower Seed
250 Grs Oats
250 Grs Korn Flakes
250 Grs Bran Flakes
250 Grs All Bran
1 Kg Sugar
1 Kg Butter
500 Grs Honey
Method:
1) Melt the butter with the sugar until it forms a caramel consistency, without burning.
2) Once the desired consistency is achieved, add in the honey and take out of the fire.
3) Mix all the dry ingredients in a large bowl, mix in the wet ingredients, so that everything is covered. (it is important to work fast, because the caramel needs to stay hot so it doesn’t begin to harden as it cools down).
4) Place in sheet pan with wax paper, and place in a 250°F oven until all the nuts are golden brown. (About 15 min).
